Course Objectives

Provide information needed to ensure hygienic practices and safety in food industry. Discuss principles related to contamination, cleaning compounds, sanitizers and cleaning equipment. Encourage students to develop an ability to design sanitary system and implement HACCP. Develop an understanding of professional and ethical responsibility and an ability to communicate effectively.
